Mediterranean Marinated Chicken

Yields: 4 servings
Ingredients:
Mediterranean Marinade
1/2 cup olive oil
1 teaspoon cumin
1/2 teaspoon cardamom
1/2 teaspoon smoked paprika
2 cloves of garlic, grated
2 tablespoons lemon juice
Sea salt and ground pepper, to taste
4 chicken thighs
Greek Yogurt Sauce with Dill and Lemon
1/2 cup CP-Meiji Greek Style Yogurt (Natural)
1 clove garlic, grated
2 tablespoons chopped or dried dill
2 tablespoons olive oil
1 tablespoon lemon juice and its zest
1 pinch of cayenne
Directions:
Marinating the Chicken:
In a bowl, whisk together olive oil, cumin, cardamom, smoked paprika, grated garlic, lemon juice, salt, and pepper to prepare the marinade.
Place the chicken thighs in a shallow dish or resealable plastic bag. Pour the marinade over the chicken, making sure it's well coated. Marinate in the refrigerator for at least 1 hour, or preferably overnight, to let the flavors penetrate the meat.
Cooking the Chicken:
Preheat the grill or a grill pan over medium-high heat.
Remove the chicken thighs from the marinade, shaking off any excess marinade.
Grill the chicken thighs for about 6-8 minutes per side, or until cooked through and nicely charred on the outside. The internal temperature should reach 75°C (165°F). Remove from the grill and let them rest for a few minutes before serving.
Preparing the Greek Yogurt Sauce:
In a small bowl, combine Greek yogurt, grated garlic, chopped or dried dill, olive oil, lemon juice, lemon zest, and a pinch of cayenne. Mix well until smooth and creamy.
Adjust seasoning with salt and pepper according to taste.
Serving:
Serve the grilled Mediterranean chicken thighs with a dollop of the Greek yogurt sauce on top or on the side.
Garnish with additional fresh dill and lemon zest if desired.
