Mediterranean Marinated Chicken

Yields: 4 servings

Ingredients:

  • Mediterranean Marinade

    • 1/2 cup olive oil

    • 1 teaspoon cumin

    • 1/2 teaspoon cardamom

    • 1/2 teaspoon smoked paprika

    • 2 cloves of garlic, grated

    • 2 tablespoons lemon juice

    • Sea salt and ground pepper, to taste

    • 4 chicken thighs

  • Greek Yogurt Sauce with Dill and Lemon

    • 1/2 cup CP-Meiji Greek Style Yogurt (Natural)

    • 1 clove garlic, grated

    • 2 tablespoons chopped or dried dill

    • 2 tablespoons olive oil

    • 1 tablespoon lemon juice and its zest

    • 1 pinch of cayenne

Directions:

  • Marinating the Chicken:

    • In a bowl, whisk together olive oil, cumin, cardamom, smoked paprika, grated garlic, lemon juice, salt, and pepper to prepare the marinade.

    • Place the chicken thighs in a shallow dish or resealable plastic bag. Pour the marinade over the chicken, making sure it's well coated. Marinate in the refrigerator for at least 1 hour, or preferably overnight, to let the flavors penetrate the meat. 

  • Cooking the Chicken: 

    • Preheat the grill or a grill pan over medium-high heat.

    • Remove the chicken thighs from the marinade, shaking off any excess marinade.

    • Grill the chicken thighs for about 6-8 minutes per side, or until cooked through and nicely charred on the outside. The internal temperature should reach 75°C (165°F). Remove from the grill and let them rest for a few minutes before serving.

  • Preparing the Greek Yogurt Sauce:

    • In a small bowl, combine Greek yogurt, grated garlic, chopped or dried dill, olive oil, lemon juice, lemon zest, and a pinch of cayenne. Mix well until smooth and creamy.

    • Adjust seasoning with salt and pepper according to taste.

  • Serving:

    • Serve the grilled Mediterranean chicken thighs with a dollop of the Greek yogurt sauce on top or on the side.

      Garnish with additional fresh dill and lemon zest if desired.
