Creamy Mashed Potatoes

Here’s the secret ingredient to attain the perfect creamy texture to your mashed potatoes: CP-Meiji Greek Style Yogurt!

Cook time: 20 minutes
Yields: 6 servings

Ingredients:

  • 8 russet potatoes, peeled and cut into chunks

  • 1 garlic clove

  • 2 tablespoons olive oil

  • 1 cup CP-Meiji Greek Style Yogurt (Natural)

  • Sea salt and freshly ground pepper, to taste

  • 3-4 sprigs of chive, chopped

Directions:

  1. In a saucepan of salted water, cook the potatoes and garlic until tender (approximately 15-20 minutes)

  2. Drain the cooked potatoes and garlic.

  3. Using a potato masher, crush the potatoes and garlic with the olive oil until desired consistency is reached.

  4. Add the Greek yogurt, salt, pepper, and chopped chives to the mashed potatoes.

  5. Mix everything together for a few more seconds until well combined.

  6. Taste and adjust seasoning if needed.
